Dauphin Co-op is pleased to offer a new high-quality cheese imported directly from Italy!

Brenda Green, Deli Manager shares details about the authenticity and quality of this new offering along with Amber and Jolene in the Deli Department.

Parmigiano Reggiano is crafted only in select provinces of Northern Italy—Parma, Reggio Emilia, Modena, and parts of Mantova and Bologna. It’s born in a picturesque stretch of countryside between the Apennine Mountains and the Po River, where dairies and farms uphold centuries-old traditions. In quiet aging warehouses, this iconic cheese matures slowly, transforming simple, natural ingredients into something extraordinary.

Every wheel of Parmigiano Reggiano requires approximately 550 litres of milk and the constant dedication of farmers and casari (cheesemakers). The cheese is aged on wooden boards, where it slowly dries and forms a natural, untreated crust that is perfectly edible.

The minimum aging period is 12 months. Only after this time can the cheese be inspected to determine whether it meets the standards to carry the Parmigiano Reggiano name. During this maturation process, the cheese develops its signature granular texture and flake-like fracture. It becomes friable, soluble, and remarkably flavorful.

Parmigiano Reggiano is not only delicious but also highly digestible and extremely nutritious. It consistently stands out as a product of excellence.

Every wheel of Parmigiano Reggiano undergoes a meticulous inspection by experts from the Consorzio. Only those that meet the strict standards of the Protected Designation of Origin (DOP) are branded with the official fire mark—a symbol of authenticity and excellence.
